This weekend was Yumwe time! I had the honor of being host to a cooking event called Wok Night. Each of us participants took care of one dish (we were three girls, Inka, Anja and me) and look which pretty and delicious meals we created:
Main course 2: Sauted chicken with broccoli, mushrooms and cashews, seasoned with soy sauce and sesame oil
Equipment & essential ingredients you need:
Sharp knives & a peeler
Rice vinegar or traditional dark Chinese vinegar (the one you pour over Jiaozi dumplings)
Chinese 5 spices seasoning
Basmati, Patna or Jasmine rice (whichever you prefer)
The food prepared served 3 hungry stomachs and we had left overs :) 4 would work out as well
How to prepare the starter?
Peel the cucumber – Cut it in inch thick slices – With a small knife take out the middle part – Boil one ounce (30g) soba noodles according to the package instruction (4-5 min, then rinse with cold water) – toss the noodles in a bowl and pour a shot glass mix of sesame oil, vinegar & soy sauce over the noodles – season with Chinese 5 spices and stir well – arrange the cucumber pieces on a plate and with the help of chopsticks artistically maneuver a few noodles in spiral form into the cucumber piece – decorate with white and black sesame seeds
How to make the veggie main course?
Peel about 1 pound (1/2 kg) carrots and clean 2 large leeks – cut the veggies in thin slices – open a can of coconut milk and mix with 1 tablespoon curry seasoning and 2 tablespoons dark soy sauce – put your stove on max heat and pour 1 tablespoon of oil (colza or sesame oil) in the wok – toss in the veggies – saute for a few minutes – pour over the coconut milk mix and serve
How to make the chicken main course?
Wash two-three chicken breasts and cut them in mouth big pieces – for a perfect version of the dish: prepare the chicken in advance and marinate it in sesame oil – chop a broccoli head into mouth big pieces – clean and cut in half about 1 pound (1/2 kg) mushrooms – dice one onion – put your stove on max heat and pour 1 tablespoon of oil (colza or sesame oil) in the wok – toss in the meat and saute for a few minutes- take out the meat and toss in the onion and the broccoli, after a minute or two add the mushrooms – season with soy sauce – then add a handful of cashews, stir well and enjoy
